Ingredients
  • 1 cup chopped and pitted dates
  • 2 cups boiling water
  • 1 ½ teaspoons baking soda
  • 1 cup chopped nuts (walnuts, pecans
    or almonds)
  • 1 ¼ cups brown rice syrup
  • 4 Tablespoons butter
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 2 ¼ cups flour (either all purpose or half whole and half all purpose)
  • 3 Tablespoons ground Salba®

Cooking Instructions

  • Combine baking soda with the boiling water. Soak the dates in the water and soda solution for 30 minutes.
  • Cream butter with brown rice syrup. Add eggs, vanilla, dates, nuts, flour and salt.
    Pour into greased loaf pan and bake at 300° (F) for 1 hour or until the inserted pick comes out clean. Remove from pan while warm and place onto cooling rack.
    Yields one loaf.
