Egg puffs with Salba® Salsa

Description

These mini, simple soufflés are pretty right out of the oven and an excellent, well rounded protein breakfast. Serving Size: 6 Preparation Time: 11 minutes

Ingredients
  • 1 tablespoon Salba®
  • 1 cup salsa
  • 1 tablespoon sun-dried tomatoes, oil-packed -- chopped
  • salt and pepper
  • 1/2 cup plain yogurt
  • 4 eggs
  • 8 egg whites
  • 1 teaspoon dried thyme

Cooking Instructions

  • Preheat oven to 425F.
  • Butter a 12 count muffin pan.
  • Drain the sundried tomatoes and squeeze with paper towel to absorb most of the oil.
  • Whisk together egg whites, eggs, yogurt, salt and pepper.
  • Divide evenly among muffin tins. Top with sun-dried tomatoes and thyme.
  • Bake for 10-14 minutes until puffed and cooked through.
  • Stir Salba® seeds into salsa.
  • NOTES: Serve 2 puffs per person with salsa on the side and a glass of carrot juice or vegetable juice and you are well on your way to a nutrient packed start to your day!
