- Preheat oven to 425F.
- Butter a 12 count muffin pan.
- Drain the sundried tomatoes and squeeze with paper towel to absorb most of the oil.
- Whisk together egg whites, eggs, yogurt, salt and pepper.
- Divide evenly among muffin tins. Top with sun-dried tomatoes and thyme.
- Bake for 10-14 minutes until puffed and cooked through.
- Stir Salba® seeds into salsa.
- NOTES: Serve 2 puffs per person with salsa on the side and a glass of carrot juice or vegetable juice and you are well on your way to a nutrient packed start to your day!
